ABOUT THE COFFEE:

Roast Level: Light/medium

Process: Washed

Variety: Red bourbon arabica

Altitude: Grown 1300 to 1550 meters above sea level on the slopes of the Tecapa Volcano.

Origin: Finca Los Pirineos in Usulután, El Salvador.

Producer: Diego Baraona with Los Pirineos coffee.

Preferred Brewing Method: Espresso

DIAL IN:

We recommend a 1:3 ratio, dialing in at 17 grams dry dose, 51g liquid yield, for 25 to 30 seconds.

TASTING NOTES:

It is a full-bodied espresso with flavors of cranberry, blood orange and chocolate.

    • Coarse (very chunky) if you’re using it for a French press or cold brew.

    • Medium-coarse (less chunky) is best for pour-over.

    • Medium (like Kosher salt) if you’re using machine drip.

    • Fine (like table salt) for a moka pot or espresso machine.
